  3. Add the chicken, onion, pepper and chilli (if you’re using it) into the bowl and stir together with your hands. You can use a spoon, but it is a lot more difficult. It’s best to leave the mixture to marinate in the fridge for 1 hour, but you can cook it straightaway.
  4. Heat a large skillet or wok until smoking hot, then add the mixture. Keep everything moving over a high heat for about 10 mins using a wooden spoon until the chicken is white all over and the onions/peppers are soft.
  5. To check the chicken is cooked, find the thickest part and tear in half – if any part is still raw cook until done.
  6. Put the tortillas in the oven to heat up for 8 minutes, and serve with the fajita mixture, shredded lettuce, cheese and yoghurt.
